Christine

My name is Christine (otherwise known as “Camala’s Mom” or “Gramma C”. I have been interested in baking for as long as I can remember; growing up to be a pastry chef for a couple of local restaurants and even owning my own cafe for a short time. My new interest is in creating healthy, great tasting baked goods and deserts; always tweaking recipes by taking out the sugar and replacing it with honey, maple syrup, molasses, agave nectar, and so on. I love experimenting with vegan recipes and plan on sharing some of the ones I have tried, and created, in our blog. I live in beautiful, sunny southwest Florida where there is a variety of fruits that grow here; like the mango tree in my back yard, and coconut trees on my street. There is nothing like freshly grated coconut almond muffins right out of the oven on Sunday morning!!!!! yummy!!! Hope you have as much fun trying our recipes as we enjoy sharing them with you…. here is a picture of sunset in Naples…

As I'm sure many of you do, I was reading an old magazine while waiting for a doctors appointment and came across this recipe, dated in the October issue of Better Homes 2009.  I just had to have it since I have never used grapes in a pastry that I have baked.  (Of course I ...

This recipe caught my eye when I saw all the ingredients.  I love muffins packed full of fruit, nuts and spices--the more the better.  I started seeing this recipe in different places and thought, Ok, I have to try this one.  It comes from  the book George House Heritage Bed and Breakfast Kitchen Recipesby Todd Warren ...
