This is a great Holiday recipe that I make every year for Thanksgiving and Christmas.  I usually make mini loaves and serve one at a Holiday meal and wrap and give the others as gifts to friends.  This recipe is chocked full of cranberries and raisins–no nuts.  It originally calls for half the amount of raisins and cranberries, but you all know by now how I feel about that!–when it comes to fruit, nuts or spices–more is always better!!   This recipe is about 30 years old, (yes that old) from a magazine –cant remember anymore which one–but it is so flavorful and everyone always loves it..

INGREDIENTS
2 cups flour
1 cup sugar
1  1/2 tsp baking powder
1 tsp salt
1/2  tsp baking soda
1/4 cup butter
1 egg slightly beaten
1 tsp grated orange peel3/4 cup orange juice
1 cup raisins
2 cups chopped fresh (or frozen) cranberries
Preheat oven to 350 F degrees.  Prepare mini loaf pans by buttering and dusting with flour.
In a large bowl sift together dry ingredients–flour, sugar, salt, baking powder, baking soda.  Cut butter till crumbly into flour.
In small bowl  mix egg, orange juice and orange rind.  Add liquid to dry and mix well.  Add cranberries and raisins and stir all together.  Spoon batter prepared 9 x 5 x 3 inch loaf pan or prepared mini loaf pans.
Bake for 1 hour and 10 minutes.  Remove from oven and cool for about 5 minutes before removing from pans.  Wait to completely cooled before wrapping and storing of giving as gifts.
This bread is loaded with fresh cranberries and raisins and every bite is packed with fruit.
