This vegan recipe has is all: bananas, peanut butter, nuts and chocolate chips. Oh yeah–you’re gonna love it. I got this recipe from Namely Marly and they are fantastic!!!
INGREDIENTS
1/4 cup vegan buttermilk (soy or almond milk with 1 Tabl. of apple cider vinegar)
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup margarine
1/2 cup peanut butter
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 ripe bananas, mashed
1–2 bags dairy free chocolate chips (mo’ is betta’)
1 cup chopped walnuts

Preheat oven to 375degrees F.
Combine non-dairy milk with1 Tablespoon apple cider vinegar and set aside. Next combine dry ingredients (flour, baking soda and salt) in small bowl. Beat margarine, peanut butter, brown sugar, white sugar and vanilla in large mixing bowl until creamy. Add bananas and beat well.
Gradually beat in flour mixture and then soy (buttermilk) mixture. Stir in chocolate chips and nuts.
Drop by rounded tablespoon onto ungreased baking sheets. I used parchment.
Bake for 9 to 11 minutes or until golden brown.

Remove from oven and cool for about 2 minutes before transferring to cooling rack. She makes mention of trying not eat any cookie dough while your waiting…but knows that is a loosing battle!!!!
Because, lets face it, you can!!!

I never would have thought, cider vinegar in cookies… Love it, this is a great cookie recipe for my ever-growing list of friends that are now vegan.
yummy cookies..I can imagine the mashed bananas and pb add great flavor..oh yeah the chocolate doesn’t hurt either..lol

Oh how I wish I wasn’t allergic to bananas because those look absolutely wonderful and so delicious! And I so agree, more chocolate chips are better!!
