A wonderful moist spice cake with chopped fresh pears in the batter, paired perfectly for this Pear Spice Cake and then topped with a light dusting of powdered sugar, Gives you the Autumn Fuzzies:)

This Pear Spice Cake is super easy to prepare and full of pear flavor from the addition of the pear juice, if you cannot find pear juice you could just use apple juice, I baked this cake in a springform pan but I am sure you could also bake it in a bundt pan.

As I am typing about bundts I am reminded about the movie My Big Fat Greek Wedding when the grooms mother brings a bundt to the Greek families get together and the Greek mother was like a Bundt? What is a Bundt??? That movie is just great, leave it to me to tie my thoughts to a movie, I am always doing that…I am addicted to movies:) Well I hope you enjoy this cake in whatever type pan you want to bake it in!

Pear Spice Cake
Ingredients:

4 Tbsp unsalted butter, softened
1/4 cup granulated sugar
1/4 cup brown sugar
1 egg
1/2 tsp vanilla extract
1/4 cup plain yogurt
1 1/2 cups all purpose flour
1/4 tsp cinnamon
1/4 tsp allspice
1/4 tsp ground ginger
1/4 tsp ground nutmeg
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
3/4 cup pear or appleĀ  juice
2 ripe pears, peeled and cut in chunks

Directions:

  1. Preheat oven to 350F. Grease a round 8 inch cake pan.
  2. Cream together the butter and both sugars with an electric mixer until fluffy. Add in egg, making sure to mix until fully incorporated. Add in vanilla, and beat together for 2 minutes. Stir in yogurt.
  3. In a small bowl, combine flour, spices, baking powder, baking soda and salt. Add dry ingredients to butter mixture, Mix until just incorporated. Stir in pear juice and chopped pear chunks. Pour into prepared pan and bake for 30-35 minutes.Toothpick inserted into center should come out clean. Once cake has cooled you can dust with powdered sugar.
