A simple snack, Crispy Roasted Edamame. Have fun and experiment with your favorite flavors and spices.

I got some Edamame in my CSA basket, I personally am not a fan of soy beans, but I figured I would give them a try. I have seen some dry roasted edamame in the store before so I figured I would maybe go that route and try them as a snack since I didn’t have much to experiment with. I shelled the fresh Edamame myself so I decided to include that in this post as well.

I brought a pot of water to boil and added salt to the water once the water was boiling. I then rinsed the fresh edamame and dumped it into the boiling water. I boiled the edamame in the water for 5 minutes. I then drained the edamame and set aside to cool completely. Once the edamame was cool I grabbed the kids and started popping the edamame beans out of the pods. This process is so simple, all you do is squeeze the edamame and the beans pop right out very effortlessly, the kids had a lot of fun with this process. Then I placed all the shelled edamame beans in a bowl, you can apparently eat the edamame beans after this step but I just patted them dry, let them sit for 20 minutes to dry and made them into this wonderful little snack!

Crispy Roasted Edamame
Ingredients:
fresh or frozen edamame beans, shelled
olive oil
granulated garlic
salt
pepper
parmesan cheese, grated (optional)

Directions:

  1. Preheat the oven to 400F.
  2. Pat dry the edamame. (If using frozen edamame, thaw, rinse, drain and then pat dry.)
  3. Place the edamame into a bowl, drizzle with olive oil, then toss to coat.
  4. Sprinkle desired amount of granulated garlic, salt and pepper and if desired grated parmesan cheese. Toss to evenly coat the edamame.
  5. Spread the edamame beans evenly on a baking sheet, in a single layer.
  6. Bake in preheated 400F oven for 10 – 12 minutes, then remove from oven and stir around to ensure even cooking. Place back in the oven for 10 – 12 more minutes. Total amount of cooking time should be about 20 -24 minutes. (Keep an eye on the cooking process to prevent burning.)
  7. Remove from oven, you could eat warm or allow to cool for a nice crispy, crunchy snack! In my opinion these don’t store for too long, they started to be a bit more on the chewy side.
