The Republic of Tea makes some delicious teas of which one of my favorites is called Blackberry Sage. That is where I got the idea for this scone…
INGREDIENTS
2 cups AP flour
6 Tabl sugar
5 Tabl butter
1 Tabl baking soda
1/2 tsp baking powder
1/4 tsp salt
1 1/2 cup fresh or frozen blackberries
1 tsp grated lemon rind
1 tsp chopped fresh sage
1 tsp vanilla
1/2 cup sour cream
1/2 cup half and half (milk is fine too!)
raw sugar for sprinkling on top before baking
First grate lemon rind and chop sage. Preheat oven to 400 F degrees
Stir flour, baking powder, baking soda, sugar and salt in large bowl. Add lemon and sage. Cut in cold butter until coarse crumbs are formed.
In small separate bowl mix sour cream, half and half, and vanilla.
Whisk these together well and add to flour mixture. Stir gently. Turn out on to flour surface into a long rectangle. Cut into triangles and place on parchment lined cookie sheet. Gently brush with some half and half and sprinkle with raw sugar.
Bake for 12 to 15 minutes or until tops or golden….

The sage is more aromatic and not a strong flavor at all. I originally only put 1/2 tsp in , but I’m thinking it could use a little more.

If there’s one thing I really know how to do, it’s making scones, and I have to say, these are outstanding!! I can see from the crumb and the crust that they are perfect, and the addition of sage is just inspired! Very nice indeed!
I’ve used thyme and basil in baked sweets before, but I have to admit that it never occurred to me to use sage… it sounds like a wonderful combination of flavours, though, especially since I absolutely adore blackberry scones. Can’t wait to try this out!
