I wanted to come up with a Banana Bread that was healthy and sweetened with Agave Nectar as opposed to any other sweetener. My goal was to come up with something that was appealing to the eye and taste buds, Not something uber healthy that wasn’t enjoyed and tasted like BLAH! This is what I came up with and my family thought it was fantastic, I hope you give it a try and I hope you like it, too!

Agave Sweetened Banana Bread

1 1/2 cups whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
2 Tbsp ground flax seed
2 Tbsp wheat bran
2 large ripe bananas
1/2 cup agave nectar
2 large eggs, lightly beaten
1/4 cup applesauce
1 Tbsp coconut oil
1 tsp vanilla extract

  1. Preheat oven to 350F. Lightly grease a 8×5-inch loaf pan.
  2. In a bowl whisk together, flour, baking powder, baking soda, salt, cinnamon, ground flax seed and wheat bran.
  3. In a separate bowl, mash the bananas. Add agave nectar, eggs, applesauce, coconut oil and vanilla to the mashed banana in the bowl, Stir and mix together.
  4. Add dry ingredients to wet ingredients and mix just until blended together (don’t over mix).
  5. Pour batter into prepared pan. Bake 45 to 50 minutes, or until toothpick inserted in center comes out clean. Cool for 10 minutes in pan, then turn out onto onto rack to cool completely.
