A Decadent Chocolate Cupcake with Oreo Cookie Bits, Oreo Cupcake with Oreo Frosting.

I am a huge fan of Oreo Cookies, I absolutely love dunking my Oreos into a glass of milk, What about you…How do you like eating Oreo Cookies, if at all?

I thought for cupcake week I definitely had to feature my Oreo Cupcake recipe. These cupcakes are so wonderfully moist and delicious. I don’t dunk it in milk but this Oreo Cupcake is paired perfectly with my Oreo Whipped Cream Frosting.

Oreo Cupcakes

Ingredients:
1 1/2 cups all purpose flour
1 cup sugar
1/4 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup water
1/3 cup oil
1 Tbsp white vinegar
1 tsp vanilla extract
1/2 cup oreo cookies, chopped (about 6 oreos)

Directions:

  1. Preheat oven to 350F.Line 12 wells in your baking tin with liners. In each liner put half of an oreo cookie on the bottom cream facing up.
  2. Whisk together flour, sugar, cocoa, baking soda and salt in a mixing bowl.
  3. In another bowl, stir together the water, oil, vinegar, and vanilla. Add dry ingredients to wet mixture and mix until just combined and batter is smooth. Put 6 oreo cookies into a blender and blend until coarsely chopped, this should give you 1/2 cup of chopped oreo’s. Fold in the chopped oreo’s to the batter. Be careful not the overmix.
  4. Divide batter evenly among the wells of your tin and over the half of the oreo cookie. Bake at 350F for about 20  – 25 minutes. Cool in pan for 5 minutes then let cool completely on a wire rack before frosting the cupcakes. Frost the cupcakes with Oreo Frosting and top with a 1/4 or 1/2 of an Oreo cookie.

  12. The oreo cookie on the bottom of the liner has a little crunch to it, but the bits in the cupcake are pretty moist and soft.

  23. I found this recipe & had to try it since my 9 yr old son was having an oreo-cookie AND cupcake craving/attack. I love the recipe because it requires no eggs nor any butter – yeah! I’m trying really hard to stick to a healthier form of baking but man it’s tough. I followed the recipe above along with the recommended frosting and it was a TOTAL HIT! :) My biggest critic was my carnivore eating husband and he didn’t even notice – SUCCESS! I had my other family members taste, didn’t say anything, and until the last cupcake was gone I shared my secret! So, it’s a wonderful and yummy recipe, now it’s being requested for a birthday party this weekend. THANK YOU SOO MUCH!
