A wonderfully moist cupcake with Heath Bar Bits and Shredded Coconut.
Heath Bar Coconut Cupcakes
Ingredients:
1 1/3 cup all-purpose flour
1 1/8 tsp baking powder
1/4 tsp salt
1/2 cup butter, room temperature
1 cup sugar
2 eggs, separated
1/2 tsp vanilla
1/2 cup milk
1/3 cup shredded coconut
1/3 cup Heath Bar bits
Directions:
- Preheat the oven to 350F. Sift together the flour, baking powder and salt. Set aside.
- Cream butter with an electric mixer, then add sugar and continue to cream until it is light in color. Beat in the egg yolks, one at a time, once the egg yolks are fully incorporated add the vanilla.
- Add the dry ingredients and the milk, alternating between the two to the butter mixture. Try to make the flour your last addition, being careful not to over mix. Stir in the coconut and Heath Bar bits.
- In a separate bowl, whip the egg whites until their are stiff, Fold them into the batter. Evenly divide the batter into 12 tins and bake for about 20 minutes or until golden brown and a toothpick comes out clean when inserted into center of cupcakes.

I came across this recipe from Kitchen Confidante and knew I had to give these Heath Bar Coconut Cupcakes a try. These were her concoction to emulate the Samoa Girl Scout cookie, I just love that girl scout cookie. I bought just one box of those cookies when the girls were selling them and they were gone in one sitting…not just by me, the hub’s and kids helped me out, but okay mostly by me. Not good, that is why I only bought one box. So I thought it would be fun to try these and the flavor was very reminiscent of the cookie, they were very moist and did not have an overpowering coconut flavor. I am so glad I gave these a try, we really enjoyed them.
I frosted these cupcakes with a simple Glaze Frosting because I wanted the focus to be on the flavor of the cupcake. If you love the Samoa Girl Scout Cookies give these cupcakes a try, maybe they will hold you over until you can get your hands on the cookies again=}

I luuuuuuuuuuuv recipes with shredded coconut, I always have to control myself to not add shredded coconut in all my baking goodies. Your cupcake looks delish.
These look fantastic! I really like the downplayed glaze, but would be very tempted to sprinkle a little extra Heath bar on the top…I’m one for the little extra chocolate anywhere though
